VINEYARD

‘Los Pepones’ vineyard (0.36 hectares) is located in Sojuela, at an altitude of 650 meters, at the foot of Mount Moncalvillo. 72-year-old vineyard with traditional bush vines, sandy clay soils and North-South orientation.

Sustainable, minimally invasive viticulture work. Organic fertilizer, no herbicides or systemic products are used. Minimum tillage of the soil.

WINEMAKING

Manual harvest in 15 kg boxes in mid-October. Manual selection of the bunches in the winery. de-stemmed. Cold macerated for 3 days and fermented in stainless steel vats for 12 days with two punches a day. Malolactic fermentation and aging for 12 months in 500 and 225 liter French barrels and 225 liter Hungarian barrels.
